Chocolate-Filled Soft Donuts

 


Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup whole milk
  • 2 teaspoons active dry yeast
  • 1/4 teaspoon salt
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Confectioners' sugar for dusting

Chocolate Filling:
  • 1 cup semisweet chocolate chips
  • 1 tablespoon unsalted butter
Instructions:
  1. Proof the yeast: In a small bowl, combine warm milk (105°F to 115°F) and yeast. Stir to dissolve, then let sit for 5-10 minutes until frothy.
  2. Mix the dough: In a large mixing bowl, whisk together flour, sugar, and salt. Add eggs, melted butter, and vanilla extract. Mix until a shaggy dough forms.
  3. Knead the dough: Using a stand mixer with a dough hook attachment, knead the dough for 5-7 minutes until smooth and elastic.
  4. Let it rise: Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Punch down and shape: Punch down the dough and roll it out to about 1/2-inch thickness. Use a doughnut cutter or a glass to cut out the doughnuts.
  6. Fry the doughnuts: Heat about 2-3 inches of oil in a deep frying pan to 350°F. Fry the doughnuts for 1-2 minutes on each side, or until golden brown.
  7. Drain and cool: Place the doughnuts on a paper towel-lined plate to drain excess oil. Let them cool slightly before filling.
  8. Fill with chocolate: Melt the chocolate chips and butter in a double boiler. Dip a piping bag in the chocolate and fill the doughnuts.
