Ingredients
- 500g boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 1/2 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons ghee or oil
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon salt
- 2 large tomatoes, diced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup heavy cream
- Fresh cilantro, chopped (for garnish)
Method
- In a large bowl, whisk together yogurt, lemon juice, ginger paste, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt.
- Add the chicken pieces to the marinade and mix well. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Heat 1 tablespoon of ghee or oil in a large skillet over medium heat. Remove the chicken from the marinade, letting any excess liquid drip off.
- Add the chicken to the skillet and cook until browned on all sides, about 6-8 minutes. Transfer the chicken to a plate and set aside.
- In the same skillet, add the remaining 1 tablespoon of ghee or oil. Add the chopped onions and cook until lightly browned, about 4-5 minutes.
- Add the minced garlic and cook for 1 minute, until fragrant.
- Stir in the diced tomatoes, butter, flour, and heavy cream. Bring the mixture to a simmer.
- Add the cooked chicken to the skillet and stir to coat with the sauce. Reduce the heat to low and cook for 10-15 minutes, until the sauce has thickened and the chicken is fully coated.
- Garnish with chopped cilantro and serve over basmati rice or with naan bread.
