Gol Gappa

 Description: Gol Gappa, also known as Pani Puri, is a popular street food snack that consists of crispy, hollow puris (bread) filled with a flavorful mixture of potatoes, onions, chickpeas, and spices, served with tangy tamarind water.




Ingredients:
For the Puris:
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup ghee or oil
  • 1/2 cup lukewarm water
For the Filling:
  • 1 cup boiled and diced potatoes
  • 1 cup boiled and mashed chickpeas
  • 1/2 cup finely chopped onions
  • 1/4 cup tamarind paste
  • 1/4 cup green chutney
  • 1/4 cup date and tamarind chutney
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt, to taste
  • 1/4 cup chopped cilantro (optional)
For the Tamarind Water:
  • 1 cup tamarind paste
  • 2 cups water
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon cumin powder
  • Salt, to taste
Method:
  1. Make the Puris:
    • Mix flour, salt, and baking soda in a bowl.
    • Add ghee or oil and mix until the dough comes together.
    • Gradually add lukewarm water and knead for 5-7 minutes.
    • Cover and let the dough rest for 30 minutes.
    • Divide into small balls and roll out into thin circles.
    • Deep fry until crispy and puffed up. Drain and let cool.
  2. Prepare the Filling:
    • Mix all the filling ingredients together in a bowl.
  3. Make the Tamarind Water:
    • Mix all the tamarind water ingredients together in a bowl.
  4. Assemble the Gol Gappas:
    • Fill the puris with the prepared filling.
    • Serve with the tamarind water.
