- 1/4 cup date and tamarind chutney
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt, to taste
- 1/4 cup chopped cilantro (optional)
For the Tamarind Water:
- 1 cup tamarind paste
- 2 cups water
- 1/4 cup chopped mint leaves
- 1/4 cup chopped cilantro
- 1/2 teaspoon cumin powder
- Salt, to taste
Method:
- Make the Puris:
- Mix flour, salt, and baking soda in a bowl.
- Add ghee or oil and mix until the dough comes together.
- Gradually add lukewarm water and knead for 5-7 minutes.
- Cover and let the dough rest for 30 minutes.
- Divide into small balls and roll out into thin circles.
- Deep fry until crispy and puffed up. Drain and let cool.
- Prepare the Filling:
- Mix all the filling ingredients together in a bowl.
- Make the Tamarind Water:
- Mix all the tamarind water ingredients together in a bowl.
- Assemble the Gol Gappas:
- Fill the puris with the prepared filling.
- Serve with the tamarind water.
