Soft and Moist Chocolate Cake

Cake:
Ingredients:
  • 2 ¾ cups all-purpose flour (315g)
  • 1 ½ cups granulated sugar (180g)
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup unsweetened cocoa powder (120g)
  • 1 cup whole milk, at room temperature (240ml)
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
Instructions:
  1. Preheat the oven to 350°F (180°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a large mixing bowl, combine cocoa powder and milk. Stir until smooth.
  4. Add eggs one at a time, whisking well after each addition. Whisk in vanilla extract.
  5. Gradually add the dry ingredients to the chocolate mixture, whisking until smooth.
  6. Divide the batter evenly among the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool in pans for 5 minutes before transferring to a wire rack to cool completely.
Chocolate Ganache:
Ingredients:
  • 1 cup heavy cream (240ml)
  • 1 cup semisweet chocolate chips (200g)
Instructions:
  1. In a small saucepan, heat the cream over medium heat until simmering.
  2. Remove from heat and pour over chocolate chips in a heatproof bowl. Let sit for 5 minutes.
  3. Stir until smooth and glossy.
Assembly and Decoration:
  1. Once the cakes are completely cool, place one layer on a serving plate or cake stand.
  2. Spread a layer of chocolate ganache on top. Repeat with the remaining two layers.
  3. Frost the outside of the cake with the remaining ganache.
  4. Arrange cherries on top of the cake.
