Crispy Fried Finger Fish

Ingredients:
For the fish:
  • 1 pound Pegasus fish (or any white fish)
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • Vegetable oil for frying
For the hot and sour sauce:
  • 1 cup ketchup
  • 1/2 cup vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons grated ginger
  • 1 teaspoon grated garlic
  • 1/4 teaspoon red pepper flakes (optional)
Method:
  1. Prepare the fish: Cut the fish into finger-shaped strips. Mix flour, paprika, garlic powder, salt, and pepper in a shallow dish. Pour buttermilk into a separate shallow dish. Dip each fish strip into the buttermilk, then coat in the flour mixture, shaking off excess.
  2. Fry the fish: Heat about 1/2-inch vegetable oil in a large skillet over medium-high heat. Fry the fish strips in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  3. Make the hot and sour sauce: In a small saucepan, whisk together ketchup, vinegar, soy sauce, sugar, and cornstarch. Add grated ginger, garlic, and red pepper flakes (if using). Bring to a boil over medium heat, then reduce heat and simmer for 2-3 minutes or until thickened.
  4. Serve: Serve the fried fish strips with hot and sour sauce for dipping. Enjoy!
