Custard Fruit Trifle

A classic English dessert, the custard fruit trifle is a layered masterpiece of sweet and tangy flavors, featuring delicate custard, fresh fruits, and soft sponge cake.


Ingredients:
For the custard:
  • 2 cups milk
  • 1/2 cup sugar
  • 3 large egg yolks
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
For the fruit layer:
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup diced peaches
  • 1 cup diced pineapple
  • 1 orange, peeled and segmented
For the sponge cake layer:
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 2 large eggs
For the whipped cream:
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
Method:
  1. Make the custard: Combine milk, sugar, and salt in a saucepan. Heat until sugar dissolves. In a separate bowl, whisk egg yolks and vanilla extract. Gradually pour hot milk mixture into egg yolks, whisking constantly. Return mixture to saucepan and cook over low heat, stirring until thickened.
  2. Prepare the fruit layer: In a separate bowl, mix together berries, peaches, pineapple, and orange segments.
  3. Make the sponge cake: Preheat oven to 350°F (180°C). Grease and flour a 9x13-inch baking dish. Whisk together flour, sugar, baking powder, and salt. Add softened butter, milk, and eggs. Mix until smooth. Pour into prepared baking dish and bake for 20-25 minutes or until golden brown.
  4. Assemble the trifle: Cut the sponge cake into 1-inch cubes. Create layers of cake, fruit, and custard in a large, deep serving bowl. Repeat layers two more times, ending with a layer of custard.
  5. Top with whipped cream: Whip heavy cream and granulated sugar until stiff peaks form. Spread over the top layer of custard. Put some more fruits on the top if you like.
