Grilled Vegetable Skewers

 Colorful and healthy skewers are perfect for snacking.





Ingredients:

  • 1 cup mixed vegetables (bell peppers, zucchini, cherry tomatoes, onions, mushrooms)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
Method:
  1. Preheat grill to medium-high heat.
  2. Thread the vegetables onto skewers.
  3. In a bowl, mix together olive oil, lemon juice, salt, and pepper.
  4. Brush the mixture onto the vegetables.
  5. Grill the skewers for 10-12 minutes or until tender.
  6. Serve hot.
