Lahori Aloo Samosa

Ingredients:
For the dough:
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup ghee or oil
  • 1/2 cup lukewarm water
For the filling:
  • 2 large potatoes, boiled and diced
  • 1 onion, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon red chili powder
  • Salt, to taste
  • 2 tablespoons lemon juice
  • Chopped fresh cilantro
Method:
  1. Make the dough: Combine flour, salt, and baking powder. Add ghee or oil and mix until the dough comes together. Gradually add water and knead for 5-7 minutes.
  2. Prepare the filling: Heat oil in a pan and add cumin seeds. Add onion, coriander powder, garam masala powder, and chili powder. Cook for 1 minute. Add potatoes, salt, and lemon juice. Mix well.
  3. Assemble the samosas: Divide the dough into 8-10 portions. Roll out each portion into a thin circle. Place a tablespoon filling in the center and fold the dough into a triangle or cone shape. Seal the edges.
  4. Fry or bake: Heat oil in a deep frying pan and fry the samosas until golden brown. Alternatively, bake in a preheated oven at 180°C (350°F) for 15-20 minutes.
