Pakistani Chicken Biryani

 Description: A flavorful and aromatic rice dish made with marinated chicken, basmati rice, and a blend of spices, perfect for special occasions and gatherings.




Ingredients:
  • 2 cups basmati rice
  • 1/2 lb chicken cut into medium-sized pieces
  • 1 cup yogurt
  • 2 medium onions, chopped
  • 2 medium tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon fennel seeds powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon nutmeg powder
  • 1/2 teaspoon mace powder
  • 1/2 teaspoon garam masala powder
  • 1 tablespoon salt
  • 2 tablespoons lemon juice
  • 4 tablespoons ghee or oil
  • 4 cups water
  • 1/2 teaspoon yellow food color
  • 4-5 fresh green chilies
  • Some Fresh mint leaves
Method:
  1. Rice Preparation: Rinse rice and soak for 30 minutes. Drain and set aside.
  2. Chicken Marinade: Mix chicken with yogurt, ginger, garlic, cumin seeds, coriander powder, fennel seeds powder, turmeric powder, nutmeg powder, mace powder red chili powder, garam masala powder, salt, and lemon juice. Refrigerate for at least 30 minutes or up to 2 hours.
  3. Cooking: Heat ghee or oil in a large pot over medium heat. Add onions and cook until golden brown. Now add tomatoes and cook for ten minutes. Add the marinated chicken and cook until browned. Add the marination and 1 cup of water and cover the chicken till completely cooked.
  4. Layering: In a separate pot, heat 4 cups of water. Add rice and cook until 3/4 done. Drain and set aside. In the same pot, add the cooked chicken mixture and spread half of the cooked rice on top. Repeat the layers. Mix yellow food color in 1 tablespoon of water and pour it on the rice. Add 2 tablespoons of cooking oil, 1/2 teaspoon of garam masala powder, green chilies, and fresh mint leaves. 
  5. Dum Cooking: Cover the pot with a tight lid and cook over low heat for 10-15 minutes or until the rice is fully cooked and fragrant.
