Ingredients
- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup brown sugar
- 2 tbsp soy sauce
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional)
Method
- Preheat: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Cook the chicken: Add the chicken to the skillet and cook until browned and cooked, about 5-7 minutes. Remove from the skillet and set aside.
- Make sauce: In the same skillet, add 1 tablespoon of olive oil, brown sugar, soy sauce, ginger, garlic powder, and red pepper flakes (if using). Cook for 1-2 minutes, stirring constantly, until the sauce thickens.
- Add pineapple: Add the chunks to the skillet and cook for 2 minutes, stirring occasionally.
- Combine: Add the cooked chicken back to the skillet and toss to coat with the pineapple sauce.
- Season: Season with salt and pepper to taste.
- Garnish: Garnish with chopped cilantro (if using) and serve hot over rice or noodles.
