Special Kheer (Rice Pudding)



 Ingredients:

  • 1 cup basmati rice
  • 1-liter full-fat milk
  • 1/2 cup sugar
  • 6-7 rusks
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped cashew nuts
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
Authentic Method:
  1. Rinse and soak rice: Rinse the rice in a fine mesh sieve. Soak the rice in water for at least 30 minutes. Drain and boil the rice.
  2. Cook the Kheer: Pour the milk into the saucepan, boil over medium heat, and stir constantly. In the grinding jug add boiled rice and some water and grind it. Now add the rusks into the grinder and make a fine paste. Add this paste to the milk and stir until the kheer thickens. Now add cardamom powder.
  3. Add sugar: Add the sugar in a small pan and let it caramelize on low heat, now pour the caramelized sugar into the kheer mix and mix it well.  
  4. Simmer and reduce: Reduce the heat to low and simmer, uncovered, for 10-15 minutes or until the kheer has thickened to your liking.
  5. Dry roast the nuts: Dry-roast the crushed dry fruits for 1-2 minutes and garnish the kheer with roasted nuts and saffron threads before serving. Serve hot or refrigerate for 2-3 hours if you like it cold.
