A classic Italian dish, chicken lasagna is a layered masterpiece of tender chicken, rich sauce, and creamy cheese wrapped in fresh pasta sheets.
Ingredients:
- 8-10 lasagna sheets
- 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 2 medium onions, chopped
- 3 cloves of garlic, minced
- 2 cups marinara sauce
- 1 cup white sauce
- 1 cup grated mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 egg, beaten
- Salt and pepper, to taste
- Fresh basil leaves, chopped (optional)
Method:
- Preheat the oven to 375°F (190°C).
- Cook the lasagna sheets according to package instructions. Drain and set aside.
- In a large skillet, sauté the chicken, onions, and garlic until the chicken is cooked.
- Stir in the marinara sauce and bring to a simmer. Let it cook for a few minutes until heated through.
- In a separate saucepan, make the white sauce by melting butter, whisking in flour, and slowly adding milk. Bring to a simmer until thickened.
- In a large bowl, combine the cooked chicken mixture, white sauce, and chopped basil (if using). Season with salt and pepper to taste.
- In a 9x13-inch baking dish, create the lasagna layers:
- Spread a layer of marinara sauce on the bottom
- Arrange 4 lasagna sheets on top
- Spread half of the chicken mixture
- Sprinkle with half of the mozzarella and parmesan cheese
- Repeat the layers: marinara sauce, lasagna sheets, chicken mixture, and cheese
- Top the final layer of lasagna sheets with the remaining cheese and a sprinkle of parmesan.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for 10-15 minutes, until the cheese is melted and bubbly.
