Spicy Chicken and Vegetable Stir-Fry with Rice

Ingredients:

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 medium bell peppers (any color), sliced
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 medium zucchini, sliced
  • 1 tablespoon grated fresh ginger
  • 2-3 teaspoons Spicy Sauce (store-bought or homemade)
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
Instructions:
  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  2. Add chicken until browned and cooked through (5-6 minutes). Remove from skillet.
  3. Add another tablespoon of oil, bell peppers, onion, garlic, and ginger. Cook until vegetables are tender-crisp (3-4 minutes).
  4. Add zucchini and cook for an additional 2 minutes.
  5. Return chicken to skillet, add Spicy Sauce and soy sauce. Stir-fry everything together for 1-2 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot with boiled rice.
